Cucumber Orange Salad
Gazpacho

Cucumber Orange Salad
2 to 3 baby cucumbers, cubed
2 medium oranges, cubed
Juice of 1 lime
1/4 tsp of salt
Toss together well.
Serve Chilled.
Makes 2 servings.
For variety add some grated ginger or dried chili flakes.
Experiment!

Gazpacho
1 (46 oz ) can of tomato juice
1 medium green pepper, minced
1 small onion, minced, rinsed and well-drained
1 cucumber, peeled and minced
2 small green chilies,
minced (canned) or to taste
1 Tablespoon Worchestshire sauce
1 teaspoon season salt
1 teaspoon instant minced garlic
1 Tablespoon olive oil
1 Tablespoon chopped chives
2 drops hot pepper sauce
salt, white pepper
lemon wedges
Combine everything, but lemon wedges.
Chill thoroughly and serve with lemon wedges.
