Anna's Eggplant Caviar
3 or 4 large eggplant
9 small hot peppers
1 tsp. salt
1/4 tsp. black pepper
1/4 cup vinegar
1 Tablespoon oil
Three cloves chopped garlic
Place whole eggplant and peppers on cookie sheet and bake in hot
oven until very soft, the peppers will be done first.
Cool. Peel eggplant, cut ends off ofpeppers. Chop all very small with a knife.
In a large bowl, combine chopped eggplant and peppers. Add salt, vinegar, oil and garlic. Mix together with an old fashioned potato masher
Do not use blender--gets much too mushy.
Serve on crackers or sandwiches.
Freezes well.
